  • 1 Large pot: For boiling water to cook the pasta.
  • 1 Colander: To drain the cooked pasta.
  • 1 Large skillet or frying pan: For sautéing the spinach, mushrooms, artichokes, and other ingredients.
  • 1 Wooden spoon or spatula: For stirring and tossing the ingredients in the skillet.
  • 1 Cutting board and knife: For chopping vegetables like onions, garlic, mushrooms, and artichokes.
  • 1 Pasta spoon or tongs: For transferring cooked pasta from the pot to the skillet.
  • 1 Grater: If using cheese like Parmesan or mozzarella, for grating over the finished dish.
  • 1 Serving bowl or individual plates: For serving the finished spinach and artichoke pasta.

Ingredients
  

  • 1 8oz Pasta of your choice (such as spaghetti, fettuccine, or penne)
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 15 oz can artichoke hearts, drained and chopped
  • 2 cups fresh baby spinach
  • 1 cup baby bella mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent, about 2-3 minutes.
  • Add the sliced mushrooms to the skillet and cook until they release moisture and start to brown, about 5-6 minutes.
  • Stir in the artichoke hearts and cook for another 2-3 minutes until heated through.
  • Add the fresh spinach leaves to the skillet and cook until wilted, about 2 minutes.
  • Pour in the heavy cream and stir until the vegetables are evenly coated. Season with salt, pepper, Bring to a simmer for 2-3 minutes.
  • Add the cooked pasta to the skillet and toss until well combined and heated through.
  • If desired, sprinkle grated Parmesan cheese over the pasta and toss to combine.
  • Serve the spinach and artichoke pasta hot, garnished with chopped parsley or basil.
