Creamy Cauliflower and Broccoli Salad with Honey Dijon Dressing

A creamy, crunchy cauliflower and broccoli salad with bacon, cranberries, and honey Dijon dressing. It's perfect for potlucks, holidays, or easy make-ahead meals.

Ingredients
  

For the Salad:

  • 3 cups broccoli florets, chopped small
  • 3 cups cauliflower florets, chopped small
  • 6 slices bacon, cooked crispy and crumbled
  • ½ cup dried cranberries
  • 1 cup shredded sharp cheddar cheese
  • cup red onion, finely diced
  • ½ cup sunflower seeds or sliced almonds

For the Honey Dijon Dressing:

  • ¾ cup mayonnaise
  • 2 tablespoon Greek yogurt
  • 2 tablespoon honey
  • tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt & pepper to taste

Instructions
 

  • Prep the veggies Chop broccoli and cauliflower into small, bite-sized pieces for the best texture.
  • Cook the bacon Cook until crispy, then crumble into bits.
  • Make the dressing In a bowl, whisk together mayo, Greek yogurt, honey, Dijon mustard, apple cider vinegar, salt, and pepper.
  • Assemble the salad In a large bowl, combine broccoli, cauliflower, bacon, cranberries, cheese, onion, and seeds.
  • Toss it all together Pour dressing over the salad and mix until everything is evenly coated.
  • Chill Refrigerate for at least 1 hour to let flavors blend beautifully.
