For the Filling
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup frozen peas
- 2 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme (or ½ teaspoon dried)
- 1 teaspoon fresh rosemary, minced (optional)
- 1 cup Guinness stout
- 1 cup beef broth
- 2 tablespoon flour
- Salt and pepper to taste
For the Mashed Potato Topping
- 2 ibs Yukon gold potatoes, peeled and cubed
- 4 tablespoon butter
- ½ cup ½ cup heavy cream or milk
- ½ cup shredded Irish cheddar
- Salt and pepper to taste
1. Make the Mashed Potatoes
Boil potatoes in salted water until fork tender (about 15 minutes).Drain and mash with butter, cream, salt, and pepper. Stir in cheddar if using. Set aside.
4. Build the Sauce
Stir in tomato paste and cook for 1 minute.
Sprinkle flour over the mixture and stir well.
Pour in Guinness and beef broth, stirring to combine.
Add Worcestershire sauce, thyme, rosemary, salt, and pepper.
Simmer about 8–10 minutes until thickened.
Stir in frozen peas.
5. Assemble the Pie
Preheat oven to 400°F.
Spread beef mixture evenly in a baking dish.
Top with mashed potatoes, spreading evenly. Use a fork to create ridges for crispy edges.
