Ratatouille Delight
Ratatouille Delight is a delicious and hearty dish that combines the traditional French ratatouille recipe with an American twist. Perfect for a comforting meal on a cold night, this dish is sure to please the entire family.

- 1 Medium Or Large Pot
- 1 Cooking Spoon
Ingredients
- 3 Lbs Ground Italian sausage
- 1 Eggplant Cut into 1" cubes
- 4 Bell peppers Cut into 1" cubes
- 4 Zucchini Cut into 1" cubes
- 3 Cans Diced tomato (28 oz)
- 1 Yellow onion medium Diced
- .5 Cup Red Wine
- 6 Cloves Garlic (Minced)
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 2 Sprigs Thyme
Instructions
- Fry sausage in medium to large size pot, breaking up into pieces as it cooks until no longer pink.
- Place sausage in a separate bowl and set aside. Do not drain the fat.
- In the same pot, Sauté the vegetables for about 5 minutes or so until soft.
- Add the wine, spices and tomato and let simmer for about 30 minutes adding back in the sausage.
- Take out the thyme sprigs and serve.
Notes
Serve with crusty bread on a chilly night.
