Ingredients
- 1 8oz Pasta of your choice (such as spaghetti, fettuccine, or penne)
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 15 oz can artichoke hearts, drained and chopped
- 2 cups fresh baby spinach
- 1 cup baby bella mushrooms, sliced
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent, about 2-3 minutes.
- Add the sliced mushrooms to the skillet and cook until they release moisture and start to brown, about 5-6 minutes.
- Stir in the artichoke hearts and cook for another 2-3 minutes until heated through.
- Add the fresh spinach leaves to the skillet and cook until wilted, about 2 minutes.
