Garlicky Steak Bites with potatoes

Steak Bites
- 1 lb. sirloin steak cut into bite-sized pieces
- 2 tablespoon olive oil *or use butter
- 2 garlic cloves minced
- 1 tsp. smoked paprika *see note
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley chopped, for garnish
Potatoes
- 1 lb baby potatoes, halved
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- salt & pepper, to taste
Steak Bites
Cut steak into 1" thick slices, then lay flat to cut into 1" cubes as best as possible.
Add steak bites to a large bowl along with seasonings and oil and mix until well coated.
Heat a cast iron pan over high heat. Add steak bites in a single layer being careful not to overcrowd your pan. (May need to do in batches!)
Sear for 2-3 minutes on each side for a medium-rare finish. Remove to a plate and let rest.
Potatoes
Wash and cut baby potatoes in half. Add to a large bowl and toss with seasoning and oil.
Spread potatoes in a single layer on a baking sheet or a cast iron skillet and roast for 25-30 minutes making sure to flip halfway. Potatoes are ready when they're golden brown and fork-tender.
When ready, serve hot and garnish with more parsley if desired.

- Feel free to swap out the spices or seasoning as you wish.
- *To can use regular paprika if you do not have smoked.
- You can mix in bell peppers, onions and/or mushrooms to your steak if you want to get those veggies in.
