These steak bites were actually inspired by Texas Roadhouse. My daughter and I went with some family for the first time, and she ordered the steak bites and ever since, she hasn’t stopped talking about them! With a big family, it’s such a win when we can bring that restaurant-style flavor home without packing everyone up and heading out.
How to prepare the steak bites:

Step 1: Cut the steak vertically into 1" thick slices.

Step 2: Then cut the steak into even 1 inch cubes (as even as you can get them).

Step 3: In a large bowl, mix the steak bites with the minced garlic, smoked paprika, salt, and black pepper until well coated.

Step 4: Sear steak bites in hot cast iron pan for 2-3 minutes on both sides for medium-rare steak. Remove and let rest.

- The best pans for cooking steak bites are a cast-iron skillet or a stainless steel skillet. They heat up quickly and evenly, with excellent heat retention and distribution, allowing a beautiful sear.
- Cook the steak to medium-rare or medium-well to keep it tender.
- Choose tender cuts of beef such as sirloin, ribeye, or tenderloin for the best flavor and texture.
- Cut the steak into uniform, bite-sized pieces to ensure they cook evenly.

How To Make Roasted Potatoes

- 1 lb. sirloin steak cut into bite-sized pieces
- 2 tablespoon olive oil *or use butter
- 2 garlic cloves minced
- 1 tsp. smoked paprika *see note

- ½ teaspoon black pepper
- 1 tablespoon fresh parsley chopped, for garnish
Potatoes
- 1 lb baby potatoes, halved
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary

Instructions
- Preheat oven to 400℉.
Steak Bites
- Cut steak into 1" thick slices, then lay flat to cut into 1" cubes as best as possible.
- Add steak bites to a large bowl along with seasonings and oil and mix until well coated.
- Heat a cast iron pan over high heat. Add steak bites in a single layer being careful not to overcrowd your pan. (May need to do in batches!)
- Sear for 2-3 minutes on each side for a medium-rare finish. Remove to a plate and let rest.
Potatoes
- Wash and cut baby potatoes in half. Add to a large bowl and toss with seasoning and oil.
- Spread potatoes in a single layer on a baking sheet or a cast iron skillet and roast for 25-30 minutes making sure to flip halfway. Potatoes are ready when they're golden brown and fork-tender.
- When ready, serve hot and garnish with more parsley if desired.
