Creamy Avocado Hummus
Avocado Hummus is a creamy, flavorful twist on traditional hummus, blending ripe avacados with chickpeas, tahini, lemon juice, garlic and olive oil. This variation adds a rich buttery texture, with a fresh taste. It is a quick and easy snack or appetizer idea that eveyone will love!

Ingredients
- 1 ripe avocado
- 1 15oz can chickpeas (drained and rinsed)
- 2 tablespoon Tahini
- 2 tablespoon lemon juice (freshly squeezed)
- 2 garlic cloves (minced)
- 2 tablespoon olive oil
- salt and pepper to taste
- Cold water as needed for consistency
- Optional toppings such as paprika, olive oil, parsley
Instructions
- 1. Place the chickpeas in a medium saucepan and cover with a few inches of water. Bring the mixture to a boil over medium high heat and cook for about 20 minutes until the chickpeas are nice and soft. Drain the chickpeas and run them under cool water and set aside.
- 2. Cut the avocado in half, scoop out the flesh, and add to the food processor.
- 3. Add the chickpeas, tahini, lemon juice, minced garlic, and olive oil to the food processor and blend until smooth.
- 4. If the mixture is too thick, add cold water, a tablespoon at a time until you reach your desired consistency.
- 5. Taste and season with salt and pepper, adjust seasonings as needed and blend again to combine.
- 6. Transfer the Hummus to a serving bowl. Drizzle with olive oil and sprinkle with paprika. Enjoy with pita chips, crackers, vegetables, etc.
