Irish Bread Pudding

Ingredients
- 6 cups cubed Irish soda bread
- 2 cups milk whole milk is preferred
- ½ cup heavy cream
- ½ cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- butter for greasing the baking dish
Instructions
- 1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with butter.
- 2. In a large mixing bowl, combine the milk, heavy cream, sugar, eggs, vanilla extract, cinnamon, and nutmeg. Whisk until well combined.
- 3. Add the bread cubes to the bowl, along with the raisins if desired. Gently stir to coat the bread cubes with the liquid mixture. Let it sit for about 10 minutes to allow the bread to absorb the liquid.
- 4. Pour the bread mixture into the greased baking dish, spreading it out evenly.
- 5. Bake for 45-50 minutes, or until the top is golden brown and the pudding is set. You can test for doneness by inserting a knife into the center - it should come out clean.
- 6. Remove the pudding from the oven and let it cool for a few minutes before serving. Serve warm or at room temperature, alone or with a dollop of whipped cream or a drizzle of caramel sauce. Enjoy!
