Vegetarian Stuffed Peppers
These peppers are a delicious and satisfying dish with a flavorful mixture of corn, beans, salsa, and cheese. The peppers are broiled until tender and slightly charred and the filling is cooked through. This meatless version is a nutritious as well as tasty alternative to traditional stuffed peppers.
Equipment
- 1 baking dish
- 1 chef's knife
- 1 cutting board
- 1 mixing bowl
- 1 spoon or spatula
Ingredients
- 4 large bell peppers
- extra virgin olive oil
- 1 seeded and diced jalapeno pepper
- 2 minced garlic cloves
- 1 diced onion
- 2 cups cheddar/jack mixture
- 1 15 oz can black beans drained and rinsed
- 1 15 oz can corn
- 1 cup salsa plus additional for serving
- 1 teaspoon chili powder
- salt and pepper to taste
Instructions
- 1. Heat broiler. Cut off tops of peppers and slice in half lengthwise. Remove the seeds. Place them on a baking sheet lined with tin foil and drizzle with olive oil and season with salt and pepper.
- 2. Broil the peppers for a few minutes until slightly charred. Set aside
- 3. Cut off the top of the jalepeno pepper and slice in half lengthwise. Remove the seeds and dice.
- 4. add olive oil to a pan and heat. Add the pepper, onion and garlic and saute until soft.
- 5. Add the beans and corn to the mixture until it is heated through. Season with 1 teaspoon of chili powder.
- 6. Stuff the peppers and top them with salsa and cheese.
- 7. Place the stuffed peppers back under the broiler until the cheese is melted.Enjoy!!
